Breakfast anyone??

I think the best part of summer vacation is being able to enjoy breakfast.  Without having to rush out of the house in the morning, we make time to eat.. together!  It's a great feeling for me.  So we have been experimenting on different recipes.  This is one of our favorite.  The other is making fresh waffles.  Everyone tells me to make extras and freeze them... Um, we never have any left over!  :)

This is our favorite crepe recipe (but here it's called English pancakes). It's the easiest recipe! (1 C flour, 1 C milk, 3 eggs, 1/4 C powdered sugar) -- I normally double the recipe.

So, I make them...

and the children embellish them anyway they like... (Nutella, whipped cream, jam, whatever fresh fruit we have on hand, syrup, etc):

This is how I enjoy mine... filled with homemade apricot preserves made by my dear friend, Matt, and whipped cream... yum!

I hope you are enjoying your summer!  We certainly are...

  1. I should try this sometime. I've never tried making crepes before. I can't wait.

  2. Love crepes, pancakes.. could eat it everyday!! stopping by and hope you are having a great summer!!

  3. I SO agree! Love the relaxed, unrushed feeling of summer more than anything. Well that and crepes.

  4. oh yum!! looks delightful! so does just the thought...
